Here is one I found on a cake forum years ago (like before Facebook had Groups!) It is versatile and makes a great base for other flavours (omit the vanilla and add two mashed bananas for banana cake HEAVEN!). It holds colour really well for rainbow cakes - the ones I shudder when I get asked to make! I use this recipe at markets and for workshops and it's always a winner! Also makes perfect cupcakes and freezes beautifully.
